Galaxy Revs Rising And Falling

Does anyone know what would cause the revs on my 2009 galaxy 2.0 petrol to fall away suddenly when starting to pull away from a standing start, almost causing you to stall? In addition to this, the revs also rise suddenly when the accelerator is pressed lightly and then just as quickly fall again without any movement on the accelerator, this makes for difficulty in getting the balance right between accelerator and clutch.

Ford have had it for 3 days and seem to think that this is quite normal, which I don`t agree with. I have never experienced this before on other cars [previously owned a 2003 galaxy]
